Fresh coffee thoughts -

 



This morning is a break for selfcare, groceries have been delivered and time to prepare a low histamine diet for the week. So, yes, I do walk away from the mysterious puzzle I am currently working on -also known as our history. 

On the menu this morning, homemade chicken breakfast sausage and blueberry pancakes (grain, gluten, dairy free). My fingers are crossed it turns out edible. I am struggling with ideas for new ways to make the same ingredients on a continuum but for anyone following this healthcare path, going low hist has helped a lot of suffering. For me to give up chocolate, you know it's working.

I am trying my best with staying on target with all the juggling needed for health and medical care - it's difficult. You get tired of doctor visits that don't lead anywhere near soon enough and having to go home and figure it out for yourself to keep nudging the system. 

This past winter has offered prime conditions for crawling under a quilt and getting lost in a good mystery. The weather has been erratic and quite frankly, painful. 

This mystery - is painful and healing all at once. Trauma was my childhood's nurishment, sprinkled with love from all the innocent hearts in my lineage before me. Seeing it play out and the timing of running across photos, when I do, well - yeah, it's something. 

That along with moments in time forever and always have been etched deeply in my being among years of fog and no recall - is tough. For this I am glad I've always expressed myself, somehow, with words -whether in a journal, a poem, or one time a letter. As crazy as it seems, it's all real. It always was. 

It is helping life to make sense- kinda like how people are waking up to the shell game known as American history. 

It hurts doesn't it?

Healthier Breakfast Sausage

Ground chicken - dried onion ,garlic, and sage  - throw in thyme if you have it - salt , pepper - optional red pepper flakes (not low hist) - 1lb pkg of ground chicken makes about 9-10 nice sized patties - make and fry ahead, freeze asap for low hist or just eat. You can also add a dash or two of maple syrup to the mix. 

Ground chicken can be replaced with turkey or pork - my numbers were higher with pork, which stabs the old world German in me, but along with bread and anything with flavor, I have to give up
