Low histamine chicken patty w/ coconut creamed kale - #zebralife #zerbastrong
I do not measure when creating something new - don't ask me the first few times how much. This was my lunch today and it worked out nicely. Adding coconut cream to kale took out that gnarly bite kale can have -kids would love it! Berta ;) would approve!
I sauteed green pepper,onion (red) and fresh garlic - it was added to ground chicken with other seasonings. I also added some chia seeds to help hold it together as it cooks and retain flavors. When they were done and resting (save the jokes) I sauteed the kale in the same pan and added drizzling of coconut cream leftover from breakfast.
1lb organic fed ground chicken, no bs in their diets, was around $4 and made 5 med. patties. The bunch of kale was around 2 bucks. A can of coconut cream is around 2.50-3 and I use one can for many things. So this is budget friendly. You can make a batch , fry , and freeze to have on hand. Switch out seasonings for sage and thyme, add maple syrup, you have low hist breakfast sausage.
